"le 7ème sens" Pinot Noir Rosé ´15 Sparkling

The youngest quality in our portfolio. Juice fermented in Thasian amphoras for a short while of four weeks we wanted to create a neutral quantity of a Pinot Noir Rosé. After first racking we decided fast to fill in sparkling wine bottles to keep a reductive expression of an amphora. Her simple hedonism has now aged four and a half years inside the bottles. We are pretty fine to disgorge this fresh and fragile character during the next months. Smoky and linear. Zero dosage of course and there will be always some slightly blurry remains of yeast inside. It should be like that. – Handcrafted.
