"le 7ème sens" Auxerrois ´13 Sparkling

Auxerrois part of the Burgundy family tree find a home in Germany as well. The character is comparable to White Burgundy but it has another noble attitude. A bit more balsamic, fruity and less acidity in superior vintages. A touch of brioche, green apple describes the character of an Auxerrois in a precise way in difficult years. 2013 was a difficult year in Rheingau. Our decision we made was clear and quickly. This wine needs long term contact on the lees and a malolactic fermentation. Natural acid degradation. Our philosphy of sustainable wine fining to reduce the acidity with added carbonates is inacceptable. During the maturation of this sparkling wine we can absolutly say brut nature/zero dosage is the best what we can offer.
