Our sparkling Riesling based on the plot 27.380/381 in Wiesbaden-Frauenstein. 1958 planted on green slate and quartzite we are gifted to keep this vineyard alive with pretty low yields and to protect this fascinating old fashioned Riesling clone. This sparkling Riesling differs from the common low profile style with primary fruit odor. Manual harvest for all of our qualities, if it is still wine or sparkling wine. No clarification, no fining with additional ingredients nor racking. Only spontanous fermentation in barrels, malolactic fermentation to smoothen the acidity and a batonnage over one year to increase the mouth feeling are our recipes. After twelve months directly off the mother´s yeast we filled in pressure tolerable bottles and a secondary fermentation has started all of a sudden to refresh our body builder in a gentle way. 600 bottles and there is still undisgorged material in the basement. Ready to spill.
