This Pinot Gris 2015 is the most consequent statement of our collection in untreated wine fining. After nine months of fermentation in Greek amphoras named as Kioupia we took the mash out without the use of a pump or hoses. Free run filling with the full yeast was another straight, unorthodox decision. Real classic.
A slowlike pressing through a basket press finished that full blurry non added sulphite wine. The vineyards are planted in 1965 and the rootstocks are growing on clay. A typical rich soil with a huge content of minerals and balanced water support. We created only 800 bottles per anno. Organic of course.
